Guest Chefs at the Sunshine Coast Agricultural Show - June 13th and 14th |
|
Cathy and I were the guest chefs at the Sunshine Coast Agricultural Show on Friday 13th and Saturday 14th of June 2008. The two sessions each day were great fun to conduct and very well received. The dishes – see below - were hungrily enjoyed by the audiences who watched them being prepared and cooked.
Special requests for extra vanilla panna cottas came from the Apex crew on a nearby food stall and from Charlie (Charlene) the stage and sound manager. The sticky date puddings with warm butterscotch sauce were favoured by the lady who conducted the sheep shearing demonstrations on the adjacent stage!
Jared Young, the owner of Kleenmaid Maroochydore, generously supplied us with a Kleenmaid steamer oven. It cooked the Red Emperor en papillote and the sticky date puddings wonderfully well - they were delicious. So thank you to Kleenmaid for your support. The dishes are listed below as is the On the Ridge cooking class from which they were taken. | | | Morning session Mussels in white wine with tomato, chorizo, garlic and herbs From - Mediterranean – Touch of Spice Crispy skinned duck breast served with creamy mashed potatoes, a green bean parcel, pickled figs and fig vino cotto jus From - A French Odyssey – Journey through France Vanilla panna cotta with pomegranate syrup From - Italianicious – Cooking with Passion
