Spring Asparagus

The burst of glorious yellow daffodils and the drifts of blossom, proclaim spring has arrived.  In spring, we enjoy a variety of fresh and tantalizing flavours, a refreshing change from winter.

We might lounge in spring sunshine and feast on tender asparagus, tiny sweet tasting peas, new potatoes, pale pink lamb and tender veal.


In Spring we:

Barbeque asparagus, the palest green, with no need to trim or peel the stalks, drizzle with grassy olive oil and scatter with salty, silky, soft feta.

Delight in veal chops and spring lamb.

Savour the first strawberries and bake citrus cake.

Cook lettuce and snow peas soup.

Barbeque lamb cutlets.

Marinate oranges in Brandy with orange and chocolate ice cream.

Pan fry duck with roasted hazelnut salad.

Wrap salmon with pancetta and eggplant relish.

Steam snapper with pureed mash potato.

Serve sweet scallops wrapped in proscuitto with crisp young beans.

Bake coconut and lime cakes with mangoes.
