The On the Ridge experience delights the senses and tangibly expresses the desire to share good food and goodwill with those we love and those who are close to us. Our cuisine is modern Australian, taking the best ideas, using the freshest, local produce, combining the cooking principles, techniques and inspirations gained from many cooking traditions and cultures, and forming it into what we like to eat today. At On the Ridge we create, cook and celebrate good food to make sitting around the table and dining, a pleasurable, delectable food taste sensation for both family and friends.

Cooking on the Bay!!
Melbourne. As you know, On the Ridge Cooking School is currently in recess, so there will be no classes scheduled for the moment. We will keep you informed via Tonya's Musings, her blog and the newsletter. Meanwhile, down in Melbourne, Tonya is opening another cooking school called Cooking on the Bay in St Kilda, on Port Phillip Bay.

Summertime

It is good to enjoy the changing seasons and the new food each seasonbrings.
Summer, in Australia, is a time of celebration of friends and family coming together and a time to wind down and re-energise. In our warmer weather, meal preparation seems easier, we feel more relaxed, more informal and so entertaining is usually more flexible with lots of eating out of doors. I love marketing at the change of the seasons…to see the new seaon's produce slowly appearing on the shelves…
Summer is marvellous for bright, red, juicy tomatoes, and of course all our wonderful stone fruits. Cherries this year are much more affordable than last year and so I am using often in cooking classes. We recently used them as a garnish for my luscious delice au chocolat and always in summer in my clafotuis. Cherry clafoutis>>> Pears are also sweet, firm and delicious now - so you may like to poach some pears and serve them with a butterscotch sauce>>>. |
